Happy September! Stay cool....
Weekly Recipe:
LEMON DRIZZLE CAKE
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
4 eggs
2 cups self-rising flour
1 lemon, zested
Juice of 1 ½ lemons
1/3 cup granulated sugar for drizzle
Preheat the oven to 350 degrees. Cream butter and sugar together. Add eggs one at a time. Sift in flour, add lemon zest and mix.
Pour into lined loaf tin (8X4 inches) baking for 45-50 minutes.
Mix lemon juice and sugar-for drizzle. Pour over the warm cake.
